About this series of lung nourishing recipes
In TCM, coughs and other respiratory ailments may have several different causes. Some of the common ones include Lung deficiency, invasion by external pathogenic factors, excess phlegm and dampness in the lungs etc.
Lung deficiency may arise from being overworked, having an inherently weaker body type, having unhealthy lifestyle habits or other factors. This deficiency is often manifested as weakness or dryness in the lungs, leading to symptoms such as chronic cough, dry cough, cough with little phlegm, phlegm with traces of blood, general fatigue, etc.
Therefore, in this 3-part series, TCM physician William Peh shares with us 3 recipes that nourish and strengthen the lungs to help relief cough and other respiratory ailments caused by Lung deficiency. Mr Peh is a registered TCM physician. He graduated with a double degree in Biomedical Sciences (Nanyang Technological University) and Chinese Medicine (Beijing University of Chinese Medicine). He has treated a wide variety of diseases including Tuina traumatology, pain management, respiratory and gastrointestinal conditions. He possesses knowledge in both Chinese Medicine and modern medical sciences. Note:
In TCM, the "Lungs" broadly refer to the respiratory system, throat, nose, as well as the skin and hair on the skin.
The “Spleen” refers to the digestive system that includes the mouth, tongue, esophagus, stomach, small and large intestines, rectum and anus, with little or no reference to the spleen as known in anatomy.
Recipe 3
The white jelly fungus lung nourishing soup is highly suitable for those with chronic dry cough due to a weaker body constitution.
In this recipe, both White Jelly fungus and Lily are used to nourish the lungs and replenish the Yin of the lungs (i.e. keep the lungs moist and cool), while snow pear can clear heat and moisturise the lungs. The addition of the rock sugar not only sweetens the soup, but also reinforces its moisturising effect.
The resulting dish is not only nourishing, but also sweet and refreshing.
White Jelly Fungus Lung Nourishing Soup
Ingredients (serves 3-4)
White jelly fungus 银耳 (15g)
Lily 百合 (10g)
Snow pear 雪梨 (To taste)
Rock sugar 冰糖 (To taste)
Directions
Soak White Jelly Fungus into the warm water till soft.
Heat 600ml of water then add in the white crystal sugar till it is dissolved.
Add in the White Jelly Fungus, Lily, and sliced snow pears.
Boil with high heat for a few minutes, followed by low heat for around 15 minutes.
Consume the soup for 15 consecutive days.
Indications: Chronic dry cough due to a generally weak body constitution.
Efficacy: To treat dryness, phlegm with traces of blood, hot flushes and thirst due to a weak body constitution.
Contraindications: Not suitable for those with non-heaty types of cold with cough.

食谱三
此银耳润肺汤适宜患有虚劳咳嗽,干咳,久咳之人士,并味甘而爽口。
本药膳含有银耳,百合养阴润肺,雪梨清热润肺,及冰糖润肺止咳。
银耳润肺汤
材料(3-4人份)
银耳(15克)
百合(10克)
雪梨(适量)
冰糖(适量)
烹饪法
将银耳放入温水中浸泡至回软,摘去蒂并洗净,沥干水分。
汤锅置火上,倒入水600毫升。
先放入冰糖融化,再放入银耳、百合、雪梨一起煮沸。
煮沸后改用小火炖15分钟即成。
连吃15天。
适应症:虚劳咳嗽。
功效:治疗痰中带血、虚热口渴。
注:不适用于风寒感冒的咳嗽。
